In the Song Dynasty, diancha (whisked tea preparation) used tea drinking as its medium. However, its essence went far beyond simply quenching thirst—it combined entertainment, social interaction, and aesthetic appreciation. Popular practices such as doucha (tea competitions) and chabaixi ("a hundred tricks with tea") involved comparing the color and patterns of the foam.
