Henan Cook Wang Jingquan: I bring 'Chinese Flavor' to the Avenue des Champs - Elysées

The famous Avenue des Champs - Elysées in Paris is connected to Place de la Concorde at one end and the Arc de Triomphe at the other. Here, the top luxury brand flagship stores are concentrated, and it is known as one of the three most bustling central avenues in the world. Right on this world fashion highland, there is a Chinese Lamian restaurant. From the owner to the cooks, they are all from Henan Province, China. The authentic Lanzhou beef noodles here not only satisfy the stomachs of overseas Chinese, but also give global tourists a chance to learn about Chinese food.

巴黎著名的香榭丽舍大道,一端连接着协和广场,另一端连接着凯旋门,这里顶级奢侈品牌旗舰店云集,被称为世界三大繁华中心大街之一。就在这块世界时尚高地之上,有一家中国拉面馆,从老板到大厨都是来自河南,这里正宗的兰州牛肉拉面不仅慰藉了海外华人的胃,更让全球游客有机会了解到中国美食。

The luxurious display windows showcase the world's fashion trends. Walking to the center of the Champs-Élysées in Paris, and turning onto a side road for 50 meters, you will find a restaurant named "Oh My Noodle". The sign advertising "Lanzhou Beef Noodles" at the entrance brightens the eyes of Chinese tourists.

作为巴黎一道独特的风景线,午时的巴黎香榭丽舍大街上游人如织,路两侧的奢侈品店林立,雍容华贵的橱窗内展示着世界时尚的潮流。走到在巴黎香榭丽舍大街中心位置,沿着一条支路拐出去50米,是一家名为“oh my noodle”的餐馆,门口“兰州牛肉拉面”的广告牌,让中国游客们眼前一亮。

 

"It is busy during the Paris Olympic Games because tourists from all over the world have come." Cook Wang Jingquan welcomed the reporters into the restaurant with smiles, and then went into the operation room to continue making lamian. Although the storefront is not large, the interior space is narrow and long, it also creates an area of nearly 200 square meters. At 12 pm, the restaurant is full of people, with Chinese and foreigners accounting for half and half respectively. In addition to the specialty Lanzhou beef noodles, they also serve other famous Chinese food such as xiaolongbao, chaomian(fried noodles), gaifan(covered rice with meat and vegetable), cold dishes, etc.

“奥运会期间比较忙,全世界的游客都来了。”大厨王景全笑着把记者迎进饭店,又钻进操作间继续制作拉面。这家店虽然门头不大,但内部空间狭,有接近200平方的面积。中午12点,店内人声鼎沸,用餐的食客基本是中国人和各国食客各占半数。店内除了招牌菜兰州牛肉拉面,小笼包、炒面、盖饭、凉菜等不一而足。

"Make yourself at home here. Just help yourself." Soon after sitting down, Wang Jingquan served delicious food such as beef salad, prawns, big plate chicken, beef lamian noodles, etc. Different from lamian covered with chili oil in China, noodles here mainly use beef soup without extra ingredients. "The French prefer hand-made noodles, that's why our Lanzhou beef lamian noodles are especially popular here, but they can't handle spicy food, so we need to make some adjustments; peppers here are added according to their own preferences." 

“来这就到自己家了,尽管吃,别客气。”落座不久,王景全便端上了凉拌牛肉、大虾、大盘鸡、牛肉拉面等丰盛的菜品。与国内铺满辣椒油的拉面不同,这里的拉面主打清汤,“法国人比较喜欢手工做的面条,咱特别是兰州牛肉拉面在这里很受欢迎,但是他们不能吃辣,所以要做一些调整,辣椒是根据自己的需求添加。”

 

Wang Jingquan, from Kaifeng City, Henan Province, has been working as a lamian noodles cook in France for 8 years. After getting married, he had to take on the responsibility of supporting his family, and he happened to have the skill of making lamian, so he applied for a visa and came to France since then. He worked in a small town in the south of France at the beginning, and began to work in this lamian noodles restaurant six years ago. "The owners of the noodle shop are one from Zhengzhou and the other is a son-in-law of Henan. It could be said that this is a shop run by our fellow Henan people." Wang Jingquan said with a smile that in order to present the authentic flavor of Lanzhou, the noodle shop joined a famous local Lanzhou lamian brand, and the seasonings are also air-freighted from Lanzhou to Paris every six months.

来自开封市的王景全,来法国做拉面厨师已经8年。因为结婚之后他要担起养家的重任,正好有拉面的手艺,他便办理了工作签证来到法国,起初在法国南部一座小城,6年前来到巴黎,便在这家拉面馆扎根。“面馆老板一个是郑州人,另一个是咱河南女婿,可以说这就是咱河南人的店。”王景全笑着说,为了呈现正宗的兰州味道,面馆加盟了兰州本地一家著名的拉面品牌,调味料也是每隔半年从兰州空运到巴黎一次。

Even if it's not at mealtime, there is still a continuous stream of people coming." Wang Jingquan said that there are not many Chinese restaurants in this street, and many celebrities visit "Oh My Noodle" when they come to Paris. "Jay Chou has been here for several times." During the Olympic Games, the sudden surge in Chinese people, including the broadcasting team from CCTV and the marketing teams of major domestic corporations, made the restaurant even busier. "In addition to making lamian noodles, I also need to prepare forty to fifty takeout orders at each mealtime, including making dumplings and fried rice. In this way, I satisfy the stomachs of our fellow-countrymen with various Chinese food."

在寸土寸金的香榭丽舍大街,房租是一笔不菲的支出,折算成人民币每月要超过10万元。“巴黎是世界的热门旅游城市,游客一年四季不断,而香榭丽舍大街又是必来的打卡地之一,虽然房租贵,但毕竟人流量大,餐厅上午10店开门,营业至晚上10店,即使不在饭点,来吃饭的人也是络绎不绝。”王景全说,香街的中餐馆不算多,不少明星来巴黎时都会光顾面馆,“周杰伦就来过好几次”。而奥运会期间,央视的转播团队,以及国内大企业的营销团队,突然激增的华人也让店里更加忙碌,“我除了做拉面,每顿饭还要准备四五十份外卖,包饺子,炒盖浇饭,变着花样照顾好中国老乡们的胃。”

 

As a post-90s man who is 31 years old, Wang Jingquan does not feel like he is in a foreign land in Paris. "Actually, it's similar to working at our own doorsteps. There are many Chinese people here, and many are from Henan Province. Moreover, flights are so convenient now. Whenever we want to go home, just buy a flight ticket and leave." Now, Wang Jingquan has adapted to life in Paris. In his spare time, he would learn some French. Now, daily communication is no longer a problem for him. During holidays, he and his friends would go to vacation cities in the south of France to relax, or visit surrounding countries like Italy. When it comes to future plans, Wang Jingquan hopes to reunite with his wife and children in France, so they can work together and earn a higher income. "With a spirit of dedication and perseverance, our people from Henan can make it anywhere!"
